Who doesn’t love a good grilled cheese sandwich??!? It’s the epitome of comfort food. And when you add tender, smoky brisket it just takes it to a whole new level.

Grilled cheese sandwiches were one of the first things I learned how to cook as a kid. They were easy to make, always hit the spot, and everyone loved them. Now that I’m an adult, I had to make a serious upgrade to this childhood favorite. Not only are we adding brisket, but we are incorporating three kinds of cheese. This is not your average grilled cheese!

Typically, smoking brisket is a labor of love, and it takes time. So, you can choose to save a few slices of leftover brisket to use in this recipe, or you can head to your local barbeque restaurant or grocer and grab some brisket that is already prepared.

  • For your bread, I recommend sourdough. It has a soft center but is hearty enough to withstand a nice layer of butter on one side and heavier toppings, like brisket. French bread, Texas toast, and brioche work as well. Your bread slices should be cut to a medium thickness (about 1/4 to 1/2 inch).
  • Butter is the best way to get that golden brown, slightly crispy crust on your bread.
  • You’ll need leftover or store-bought brisket. If it comes sliced, you can chop it into smaller pieces.
  • You’ll need three kinds of cheese: smoked or sharp cheddar, pepper jack, and mozzarella. This combo delivers both meltiness and flavor. You can also use Gruyere or Monterey jack cheese. You can use thick slices of cheese or shred the cheese. And feel free to adjust the amount of cheese to your preference.

How to make a Brisket Grilled Cheese Sandwich:

Now, let’s get into this epic grilled cheese sandwich made with leftover beef brisket!

Slice and butter your bread. Slice your sourdough bread into 1/4 to 1/2-inch slices. Spread about 1/2 to 1 tablespoon of butter on one side of each piece of bread. Set it to the side.

Assemble your sandwich: Heat a skillet or cast iron pan to medium heat. Place your bread buttered-side down in the skillet. Layer the unbuttered side with three cheeses, overlapping their placement to ensure the bread is fully covered. Then, layer with 1/4 pound of brisket, followed by a second layer of all three cheeses, overlapping their placement for full coverage. Place your bread on top, unbuttered side down.

Cook your sandwich. Cook the sandwich for 3 to 4 minutes on each side until the cheese melts and the bread is golden brown on both sides. Repeat for additional sandwiches.

Tips & tricks

  • Feel free to add your favorite barbecue sauce to the brisket before adding it to your sandwich. Just a few tablespoons should be plenty to add moisture and flavor without becoming too saucy.
  • Instead of placing your butter directly in the skillet, butter the outsides of the bread first. This ensures your sandwich is buttery and prevents the sandwich from burning or sticking to the skillet. Allow your butter to come to room temperature below spreading to make the process easier.

  • 12 slices sharp cheddar cheese
  • 12 slices pepper jack cheese
  • 12 slices mozzarella cheese

Instructions

  1. Heat a skillet or cast iron pan to medium heat.
  2. Slice your sourdough bread into 1/4 to 1/2-inch slices. Spread 1/2 to 1 tablespoon of butter on one side of each piece of bread.

  4. Cook the sandwich covered for 3 to 4 minutes on each side until the cheese melts and the bread is golden brown. Repeat for additional sandwiches.
