Description

Smoky brisket layered on buttery bread and stacked with three kinds of cheese—this Brisket Grilled Cheese Sandwich is a tasty option for lunch, dinner, or afternoon snack.


Ingredients

  • 4 slices sourdough bread
  • 1/2 lb leftover smoked BBQ brisket, chopped
  • 12 slices sharp cheddar cheese
  • 12 slices pepper jack cheese
  • 12 slices mozzarella cheese
  • butter


Instructions

  1. Heat a skillet or cast iron pan to medium heat.
  2. Slice your sourdough bread into 1/4 to 1/2-inch slices. Spread 1/2 to 1 tablespoon of butter on one side of each piece of bread.
  3. Place your bread buttered-side down. Layer the unbuttered side with 1 slice of cheddar, pepper jack, and mozzarella cheese, overlapping their placement to ensure full coverage. Layer with 1/8 to 1/4 pound of brisket. Add a second slice of cheddar cheese, pepper jack cheese, and mozzarella cheese, overlapping their placement for full coverage. Place your bread on top, unbuttered side down.
  4. Cook the sandwich covered for 3 to 4 minutes on each side until the cheese melts and the bread is golden brown. Repeat for additional sandwiches.

Notes

Feel free to add your favorite barbecue sauce to the brisket before adding it to your sandwich.
