- 4 slices sourdough bread
- 1/2 lb leftover smoked BBQ brisket, chopped
- 12 slices sharp cheddar cheese
- 12 slices pepper jack cheese
- 12 slices mozzarella cheese
- butter
Instructions
- Heat a skillet or cast iron pan to medium heat.
- Slice your sourdough bread into 1/4 to 1/2-inch slices. Spread 1/2 to 1 tablespoon of butter on one side of each piece of bread.
- Place your bread buttered-side down. Layer the unbuttered side with 1 slice of cheddar, pepper jack, and mozzarella cheese, overlapping their placement to ensure full coverage. Layer with 1/8 to 1/4 pound of brisket. Add a second slice of cheddar cheese, pepper jack cheese, and mozzarella cheese, overlapping their placement for full coverage. Place your bread on top, unbuttered side down.
- Cook the sandwich covered for 3 to 4 minutes on each side until the cheese melts and the bread is golden brown. Repeat for additional sandwiches.
