Two of my game-day favorites come together in this juicy chicken burger. These Buffalo Chicken Burgers are simple to make and can even be low-carb, keto, and gluten-free friendly by ditching the buns and enjoying them solo or on top of butter lettuce.

The buffalo chicken patties are prepared in a skillet, covered in buffalo sauce, and then baked, resulting in an incredibly tender and never-dry burger. Serve them on your favorite burger bun with traditional toppings like melty cheese, ranch dressing, blue cheese crumbles, and more Buffalo sauce for the win!

  • Ground chicken can be as juicy as a beef burger when prepared correctly. Blending the ground chicken with an egg and grated parmesan maintains the moisture and helps bind the meat together. If you want to make this a turkey burger instead, substitute ground turkey.
  • For the seasonings, you’ll need freshly chopped parsley, black pepper, sea salt, onion powder, garlic powder, dried oregano, celery salt, and red pepper flakes. The parsley flakes help brighten the flavor.
  • The buffalo sauce you choose can make a huge difference, so I suggest you choose a personal favorite. When in doubt, go with Frank’s RedHot Buffalo Wings Hot Sauce.
  • Any lightly toasted bun will do, and I prefer brioche buns.
  • Optional toppings include provolone cheese, lettuce, tomato, ranch dressing, blue cheese crumbles, or extra buffalo sauce.

How to make Buffalo Chicken Burgers:

Prepare your chicken patties. Begin by breaking down the ground chicken and adding it to a large bowl. Add the chopped parsley, egg, grated parmesan cheese, black pepper, sea salt, onion powder, garlic powder, and oregano. Mix well using your hands. Form ground chicken into large patties about 3/4 to 1 inch thick and set to side.

Cook chicken patties. Heat a skillet to medium heat and add butter. Cook each patty on each side for 3 to 4 minutes, then place on a baking sheet (paid link).

Finish patties in the oven. Cover patties with buffalo sauce and top with provolone cheese. Place in a preheated oven at 400°F until cheese is melted. Chicken is done when a meat thermometer inserted into the center reaches an internal temperature of 165°F.

Make your chicken burgers. Toast buns. Layer the chicken patty on the bottom bun with optional toppings. Place top bun over toppings.

Can I store leftovers?

Yes! Uncooked ground chicken can remain in the fridge for 2-3 days. Prepared leftovers can be stored in a tightly covered container in the fridge. The cooked burger patties will keep for 3-4 days. To reheat the burgers, place them in the oven at 400°F for 7-10 minutes, or you can reheat them on the stovetop in a skillet or in the microwave.

Ingredients

  • 1 1/2 lb ground chicken
  • 1/3 cup grated parmesan cheese
  • 1 large organic egg
  • 1 tbsp fresh parsley, chopped
  • 1 tsp black pepper
  • 1/2 tsp sea salt
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/4 tsp celery salt
  • 1/4 tsp red pepper flakes
  • 1 tsp dried oregano
  • 1 tbsp of butter
  • 1 cup buffalo wing sauce
  • 4 slices provolone cheese
  • 4 brioche buns


Instructions

  1. Preheat oven to 400°F.
  2. Add ground chicken, egg, grated parmesan cheese, chopped parsley, black pepper, sea salt, onion powder, garlic powder, celery salt, red pepper flakes, and oregano. Mix well with your hands. Form into patties 3/4 to 1-inch thick patties. Set to the side. 
  3. Heat a skillet to medium heat and add butter. Cook each patty on each side for 3 to 4 minutes, then place it on a baking sheet (paid link).
  4. Cover cooked patties with buffalo sauce, then top them with provolone cheese. Place in oven and bake until the cheese is melted.
  5. Toast buns. Place one chicken patty on the bottom bun and top with lettuce, a tomato slice, and ranch dressing.

Notes

Keeping hands slightly wet helps keep the ground chicken from sticking to the hands. You can also use gloves.

Chicken is done when a meat thermometer inserted into the center reaches an internal temperature of 165°F.
