Even though I don’t eat pizza daily, I try to enjoy this all-time favorite as much as possible! For Friday pizza nights, this recipe is in constant rotation. Honestly, this is one of the few ways I can get my daughter to eat her veggies…willingly. There is just something about a Veggie Lovers Pizza that will spark the interest of both vegetarians and carnivores.

For this pizza, I kept it simple, using only red and green peppers, spinach, and mushrooms. But the one thing I love about this recipe is that you can really make it your own. You can add more veggies or replace my suggestions with your favorites.

  • I use fresh pizza dough for all of my pizza recipes. I typically grab a ball of refrigerated dough from Whole Foods.
  • To make the pizza sauce, you’ll need tomato sauce combined with parmesan cheese, basil flakes, sugar, and sea salt. I recommend MUIR GLEN Organic Tomato Sauce but feel free to use your favorite brand.
  • For the toppings, you’ll need red bell pepper, green pepper, fresh baby spinach, white mushrooms, and mozzarella cheese. Bell peppers turn very tender during the pizza’s short time in the oven.
  • Pastry flour prevents the pizza dough from sticking to the counter when it is stretched and formed.

How to make a Veggie Pizza:

Preheat. Preheat your oven to 400 degrees.

Prepare the pizza dough. Spread the pastry flour over your kitchen countertop. Place the fresh dough onto the flour and shape it into a circle using your hands. Finish shaping and stretching, then place it on a large (14 to 16 inches) pizza pan. The pizza dough should be about 14 inches in diameter. Set it aside.

Make the pizza sauce. Combine the tomato sauce, parmesan cheese, basil flakes, minced garlic, sugar, and sea salt in a medium bowl.

Prepare the pizza. Spread the pizza sauce evenly over the pizza dough, leaving around an inch of pizza dough along the edge without sauce. Layer the pizza with fresh spinach, chopped red and green bell peppers, and mushrooms. Top with cheese. Repeat the layers a second time.

Bake the pizza. Bake the pizza in the oven for 18 to 20 minutes until the crust is golden and the cheese is bubbling.

Tips
  • Make sure your pizza dough is at room temperature before you stretch it. Room-temperature dough is easier to work with and retains its moisture. I place my dough on the counter for at least an hour before forming it.
  • Always use a pizza pan with small holes in the bottom for the perfect crust.
  • While we layered this pizza with fresh toppings, you can cook your vegetables beforehand if you prefer a softer texture.
  • Don’t add too much sauce to your pizza unless you want a soggy crust. This may also cause the crust to not cook correctly.
  • This veggie pizza is excellent as-is, but if you want to switch up the veggies, you can add olives, jalapenos, broccoli florets, tomatoes, onions, and/or artichoke hearts. You can also finish the pizza with red pepper flakes (for a little heat), fresh basil leaves, and grated Parmesan.

The kids will reap the benefits, and since it tastes great, you don’t have to worry about them feeding it to the dog!

Ingredients

  • 1 lb fresh pizza dough
  • 15 oz MUIR GLEN Organic Tomato Sauce
  • 1/4 cup grated parmesan cheese
  • 1/2 tbsp basil flakes
  • 1 tsp sugar
  • 1/4 tsp sea salt
  • 1 tbsp minced garlic
  • 1/2 cup white mushrooms, chopped
  • 1/4 cup fresh baby spinach
  • 1/2 cup red pepper, chopped
  • 1/2 cup green pepper, chopped
  • 3 cups shredded mozzarella cheese
  • pastry flour


Instructions

  1. Preheat oven to 400 degrees
  2. Spread the pastry flour over the kitchen countertop. Place the fresh dough on the flour and begin shaping it into a circle using your hands. Finish shaping and stretching the dough and place it on the pizza pan.
  3. Add the tomato sauce, grated parmesan cheese, minced garlic, basil flakes, sugar, and sea salt in a medium bowl. Stir until combined. 
  4. Spread pizza sauce evenly over the pizza dough, leaving an inch along the edge without sauce. Layer the mushrooms, spinach, red bell peppers, green and bell peppers, then add a layer of mozzarella cheese. Repeat layers. 
  5.  Bake the pizza for 18 to 20 minutes until the crust is golden.

Notes

You can lightly saute the vegetables if you prefer a softer texture.
