    1. Hi, Angela! The 1 cup of uncooked was an approx. measurement of how much uncooked rice you will need to make. This should yield approx. 3 cups of cooked rice. Let me know if that helps.

  1. Delicious recipe. Foolproof way to cook fish. Easy, too, especially if you make the salsa verde ahead. We used sole, since it’s hard to come by flounder in NorCal. It turned out so tender and flavorful. The rice is outstanding. Adding lime zest is a great idea because it adds so much flavor without adding too much liquid. Perfect. Huge hit with the family and guests.
