Description

Turkey Breakfast Skillet with Chipotle Sauce pairs turkey sausage with diced potatoes, veggies, and eggs for a breakfast packed with flavor!


Ingredients

Units Scale
  • 4 cups (32 oz) Frozen Diced Hash Brown Potatoes
  • 2 cups (16 oz) Frozen Pepper & Onion Strips
  • 4 large Eggs
  • 13 oz Turkey Sausage, sliced
  • 1 Tbsp Olive Oil
  • 1 tsp Salt
  • 1 tsp Chipotle Chili Pepper Powder
  • 1/2 tsp Onion Powder
  • 1/2 tsp Black Pepper

Chipotle Sauce:

  • 1/2 cup Sour Cream
  • 1 Tbsp Sriracha Sauce
  • 1 tsp Olive Oil
  • 1/2 tsp Lemon Juice
  • 1/2 tsp Chipotle Chili Pepper Powder
  • 1/4 tsp Salt
  • 1/4 tsp Black Pepper


Instructions

  1. Heat a large cast iron pan over medium heat.
  2. Add the sliced turkey sausage into the pan and cook for 4 minutes until the turkey sausage is browned.
  3. Add the frozen peppers and onions and cook for an additional 4 minutes until the peppers are soft and the onions are slightly translucent.
  4. Add the frozen diced potatoes, salt, chili powder, onion powder, and black pepper. Cook for 10 to 12 minutes until the potatoes are tender.
  5. In a separate skillet at medium heat, crack your eggs and cook them sunny side for 4 minutes until the whites turn opaque.
  6. In a small bowl add sour cream, Sriracha sauce, olive oil, lemon juice, chipotle chili pepper powder, salt, and black pepper. Mix until ingredients are combined.
  7. To serve, place the eggs on top of the potatoes, onions, and peppers. Enjoy with the chipotle sauce drizzled on top on served on the side.
