This Creamy Tortellini Soup is a hearty, rich, flavorful, three-cheese tortellini soup filled with spinach and other fresh ingredients.

- 1 whole yellow onion
- 1 lb Italian turkey sausage
- 4 tbsp butter
- 2 tbsp minced garlic
- 2 tbsp all-purpose flour
- 1 tbsp tomato Paste
- 15 oz Fire Roasted Crushed Tomatoes (paid link)
- 5 oz organic fresh spinach
- 4 cups chicken stock
- 1 cup heavy whipping cream
- 1 tsp. Garlic & Wine Seasoning
- 1 tsp black pepper
- 1/2 tsp oregano
- 1/2 tsp sea salt
- 1/4 tsp ground thyme
- 1/4 tsp red pepper flakes
- 1/4 tsp basil flakes
- 10 oz. 3-cheese tortellini pasta, refrigerated
- grated parmesan cheese, optional
Instructions
- Chop the onion into small pieces then place to the side.
- Cook your turkey just until the pink is removed for a few minutes then remove from heat.
- Add the butter, garlic, and flour stirring until it slightly binds then add the onions. Cook your onions until translucent.
- Add tomato paste and fire-roasted crushed tomatoes stirring until it begins to cook together.
- Add the spinach, chicken stock, heavy whipping cream, and all seasonings then bring the pot to a boil.
- Place the fresh tortellini pasta and cooked turkey into the pot and cover cooking at medium heat for 15 minutes or until the pasta is softly cooked.
- Allow to cool then serve immediately.
