Description

Turkey Breakfast Skillet pairs turkey sausage with diced potatoes, veggies, and eggs for a breakfast packed with flavor!


Ingredients

Units Scale
  • 1 tbsp olive oil
  • 13 oz turkey sausage or links, sliced
  • 2 cups (16 oz) frozen pepper &; onion strips
  • 4 cups (32 oz) frozen diced hash brown potatoes
  • 1 tsp chipotle chili pepper powder
  • 1/2 tsp onion powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 4 large Eggs

Chipotle Sauce:

  • 1/2 cup sour cream
  • 1 Tbsp sriracha Sauce
  • 1 tsp olive oil
  • 1/2 tsp lemon juice
  • 1/2 tsp chipotle chili pepper powder
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Heat a large skillet over medium heat. Add the olive oil. 
  2. Add the sliced turkey sausage to the pan and cook for 4 minutes or until browned.
  3. Add the frozen peppers and onions and cook for an additional 4 minutes until the peppers are soft and the onions are slightly translucent.
  4. Add the frozen diced potatoes, chili pepper powder, onion powder, salt, and black pepper. Cook for 10 to 12 minutes until the potatoes are tender.
  5. In a separate skillet over medium heat, crack your eggs and cook them sunny-side up for 4 minutes, until the whites turn opaque.
  6. For the chipotle sauce: In a small bowl, mix sour cream, Sriracha sauce, olive oil, lemon juice, chipotle chili powder, salt, and black pepper. Mix until ingredients are combined.
  7. To serve, place the eggs on top of the potatoes, onions, and peppers. Enjoy the chipotle sauce drizzled on top or served on the side.
