Scale
- 1 1/2 cups cream of coconut
- 1 cup unsweetened coconut milk
- 1 cup evaporated milk
- 1 1/2 cups ice
- 1 tsp vanilla extract
- 1/2 tsp ground nutmeg
- 1 tsp ground cinnamon
- 8 oz dark rum
- cinnamon sticks, optional for garnish
Instructions
- In a blender (paid link), add the cream of coconut, coconut milk, evaporated milk, vanilla extract, ground cinnamon, ground nutmeg, and dark rum.
- Top the liquid mixture with the ice cubes.
- Secure the lid and blend on high speed for 60 to 90 seconds, or until the ice is completely pulverized and the mixture forms a thick, frothy, uniform emulsion.
- Pour the blended Coquito into clean glass bottles or a large airtight pitcher (paid link). Transfer to the refrigerator to chill for at least 2 to 4 hours (overnight is best) to allow the spices and rum to meld completely.
- Before serving, shake the bottle vigorously to reincorporate any settled spices or separated coconut fats. Pour into small rocks glasses (paid link) or cordial cups.
- Dust the top of each glass with a pinch of freshly grated cinnamon or nutmeg and insert a whole cinnamon stick. Serve ice-cold.
Notes
- Rum Alternatives: For a more traditional, less sweet profile, swap dark rum for 4 oz. white rum plus 4 oz. gold rum.
- Dairy-Free Alternative: Replace the evaporated milk with canned evaporated coconut milk or unsweetened condensed oat milk for a 100% plant-based, dairy-free version.
- Spice Infusion Upgrade: Simmer 2 cinnamon sticks, 3 whole cloves, and 1 star anise in ¼ cup water for 5 minutes, strain, let cool, and blend into the mix for traditional spiced-tea depth.
