Description

These Hawaiian Turkey Burgers layer turkey patties with grilled pineapple, bell peppers, a portobello mushroom cap, and homemade pineapple teriyaki sauce. It’s a marriage of Hawaiian and umami flavors!


Ingredients

  • 1 lb ground turkey
  • 1 large organic egg
  • 1/4 cup plain breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 tsp cilantro flakes
  • 1/4 tsp red pepper flakes
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp sea salt
  • 1 tsp black pepper
  • 1 whole red bell pepper, seeded and sliced
  • 1 whole green bell pepper, seeded and sliced
  • 3 pineapple slices
  • 3 portobello mushroom caps
  • 3 whole burger buns

For the Pineapple Teriyaki Sauce:

  • 1 tbsp cornstarch
  • 1 tbsp water
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp pineapple juice
  • 2 tbsp raw unfiltered honey
  • 2 tbsp light brown sugar
  • 1 tbsp minced garlic
  • 1/4 tsp garlic powder
  • 2 tsp toasted sesame oil
  • 1 tsp black pepper
  • 1/4 tsp sea salt

Instructions

  1. Heat pellet or charcoal grill to 400 degrees.
  2. In a large bowl, add the ground turkey, egg, breadcrumbs, parmesan cheese, cilantro flakes, red pepper flakes, smoked paprika, garlic powder, sea salt, and black pepper. Mix well. Form into 3 patties and set aside.
  3. Grill red bell peppers, green bell peppers, portobello mushroom caps, and pineapple slices for 4 to 5 minutes per side, or until charred to your desired level. Remove from the grill.
  4. Grill the turkey patties for 4 to 6 minutes per side. Remove from the grill.
  5. Place buns on the grill until slightly browned. Set aside.
  6. For the teriyaki sauce, add the cornstarch to a small bowl with an equal amount of water, whisk (paid link), and set aside.
  7. Add the soy sauce, pineapple juice, honey, brown sugar, minced garlic, toasted sesame oil, garlic powder, sea salt, and black pepper to a small cooking pot on low heat. Cook until it begins to bubble. Remove from heat and stir in the cornstarch mixture.
  8. Build your turkey burger starting with the pineapple slices, then the turkey patty, and finally the veggies. Drizzle on teriyaki sauce.
