Pineapple Coconut Moscow Mule

The natural flavors from the fresh pineapple chunks and fresh cilantro really turn this Pineapple Coconut Moscow Mule into a refreshing anytime drink.

Ingredients

  • fresh pineapple, chopped
  • fresh cilantro (1-2 leaves), chopped
  • 3 oz pineapple coconut juice
  • .5 oz fresh lime juice
  • 2 oz vodka
  • 3 cups ginger beer
  • ice

Instructions

  1. In a copper mug, add a few chunks of fresh pineapple, the freshly chopped cilantro, pineapple coconut juice, and lime juice.
  2. Slightly muddle the ingredients together.
  3. Fill the copper mug with ice, then pour in the vodka. Stir.
  4. Top with the ginger beer. 
  5. Garnish with a lime slice.

Notes

When muddling the cilantro and pineapple, don’t pulverize them. You want to bruise the cilantro to release its aromatic oils without turning it into a bitter paste. A few firm presses with your muddler are all you need.
