  • 1 cup unsalted butter (2 sticks)
  • 1/2 cup semisweet chocolate chips
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar (packed)
  • 2 large eggs, room temperature
  • 1 tsp. vanilla extract
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup all-purpose flour
  • 1/2 tsp sea salt
  • 1/8 tsp baking soda
  • 1 cup toffee bits, divided

Instructions

  1. Preheat your oven to 325°F. Lightly coat a 9×9-inch metal baking pan with nonstick cooking spray and line with parchment paper, leaving an overhang on the sides for easy removal.
  2. In a small saucepan over medium heat, combine the unsalted butter, granulated sugar, and brown sugar. Turn off the heat, then add the chocolate chips and stir until melted and smooth. Add to a large bowl and set aside to cool slightly.
  3. Add the eggs and vanilla to the chocolate mixture. Using a whisk (paid link), beat vigorously for 2 minutes until fully incorporated and glossy.
  4. Using a rubber spatula (paid link) or wooden spoon, fold the unsweetened cocoa powder into the bowl until fully incorporated. Add the all-purpose flour, sea salt, and baking soda. Gently fold the dry ingredients in just until no dry flour streaks remain. Do not overmix.
  5. Gently fold 1/2 of the toffee bits into the batter until evenly distributed.
  6. Pour the batter into the prepared baking pan and smooth the top evenly with your spatula (paid link). Scatter the remaining toffee bits evenly across the surface. Bake for 35 minutes, or until the edges are set, the top is crackly and shiny, and a toothpick inserted into the center comes out with a few moist crumbs. 
  7. Transfer the pan to a wire cooling rack and allow the brownies to cool completely in the pan for at least 1 hour before lifting them out with the parchment paper and slicing into squares.
