Cheesy Spinach Stuffed Chicken Breast

This low-carb Cheesy Spinach Stuffed Chicken Breast recipe fills pan-seared tender chicken breasts with a creamy, cheesy spinach filling.

Ingredients

For the filling:

  • 8 oz fresh spinach
  • 1 tbsp minced garlic
  • 8 oz cream cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded asiago cheese
  • 1 tbsp sour cream
  • 1 tsp crushed red pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp black pepper
  • 1/2 tsp sea salt

For the chicken:

  • 1 lb chicken breast
  • 1/2 tsp black pepper
  • 1 1/2 tsp Creole seasoning
  • 1 1/2 tsp oregano

Instructions

  1. Split each chicken breast down the middle creating a pocket. Be careful not to split it completely in half. Season chicken on the inside and outside.
  2. In a skillet on medium heat, cook the spinach for a few minutes until it begins to wilt. Add the spinach to a large bowl, and allow it to cool for 10 minutes. Add all remaining ingredients and mix.
  3. Stuff the chicken with the spinach filling and use toothpicks to close the opening.
  4. Add olive oil to a skillet and cook the stuffed chicken on medium-high heat for  6 to 7 minutes on each side.
  5. Remove from heat, remove the toothpicks, and serve.

Notes

For the ideal filling texture, make sure your cream cheese is at room temperature before beginning the process.
