Chicken Salad Croissant Sandwich

A Chicken Salad Croissant Sandwich is the perfect choice. A creamy chicken salad loaded with fresh ingredients served in a buttery croissant!

Ingredients

  • 1 lb shredded rotisserie chicken
  • 1/2 cup red onion, chopped
  • 1/3 cup celery, chopped
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp black pepper
  • 1 1/2 tsp basil flakes
  • 1/4 tsp sea salt
  • 3 tbsp dill relish
  • 1 cup mayo*
  • 1 tsp yellow mustard
  • 4 whole croissants*

Instructions

  1. Chop your shredded chicken into small pieces and add to a large bowl. Add the chopped red onions and chopped celery into the same bowl.
  2. Add the paprika, garlic powder, black pepper, basil flakes, sea salt, mayo, mustard, and dill relish. Mix well.
  3. Cut your croissant in half, layer with a sliced tomato and lettuce, and top off with the chicken salad.

Notes

For more creaminess, you can use 1/2 cup mayo and 1/2 cup sour cream (or Greek yogurt). Sour cream helps to balance out the heaviness of the mayo.

You can lightly toast your croissant to give the sandwich a bit more texture. Lay them cut-side down on a baking sheet (paid link) and toast at 400 degrees for about five minutes.
