Description

The sweet yet tangy flavors of lemonade combined with fresh blueberries are the star of my Blueberry Lemonade Belgian Waffles!


Ingredients

Units Scale
  • 1 1/2 cups All-Purpose Flour
  • 1/2 cup Cornstarch
  • 3 tsp. Baking Powder
  • 1 1/2 tbsp. Lemon Zest
  • 2 Large Organic Eggs, separated
  • 1/4 cup Sugar
  • 1/4 cup Melted Butter
  • 1 tsp. Vanilla Extract
  • 1/2 tsp. Lemon Extract
  • 1/4 cup. Lemon Juice
  • 2 cups Buttermilk
  • 1 cup Blueberries


Instructions

  1. Begin by grating the lemon zest from the lemon skin and set the set to the side. Cut the lemons in half and juice them. Set this to the side as well.
  2. Add flour, lemon zest, cornstarch, and baking powder into a large bowl.
  3. Separate each egg then add the egg yolks into a separate bowl with sugar, melted butter, vanilla extract, lemon extract, lemon juice, and buttermilk. Whisk (paid link) together with a hand blender (paid link).
  4. Add the wet ingredients to the dry ingredients and blend together until smooth. Set to the side.
  5. Whisk (paid link) egg whites with a hand blender (paid link) until they stiffen. Fold in blueberries into batter. Lightly fold in egg whites.
  6. Cook each waffle for 3 to 5 minutes in a waffle iron/maker (adjust based on the desired crispiness).
  7. Serve hot with syrup and butter.
