Description

Bananas Foster French Toast Casserole – french toast layered with caramelized bananas, topped with a brown sugar crumble, and baked to perfection.


Ingredients

Units Scale
  • 1 lb. French Bread Loaf
  • 8 Large Organic Eggs
  • 2 cups Whipping Cream
  • 1/3 cup Sugar
  • 1/3 cup Brown Sugar
  • 1/2 cup Evaporated milk
  • 1 tbsp. Vanilla Extract
  • 1/2 tsp Ground Cinnamon

For the Bananas Foster Sauce:

  • 3 Organic Ripe Bananas
  • 1/2 cup Butter
  • 1/3 cup Brown Sugar
  • 1/3 cup Sugar
  • 1/4 cup Whipping Cream
  • 1/4 tsp Ground Cinnamon
  • 1/2 tsp Vanilla Extract

For the Crumble Topping:

  • 1/3 cup All Purpose Flour
  • 1/3 cup Brown Sugar
  • 1/2 tsp Ground Cinnamon
  • 3 tbsp Butter (Soft)


Instructions

  1. Cut the French bread loaf into cubes.
  2. In a large bowl, add eggs, whipping cream, sugar, brown sugar, evaporated milk, vanilla extract and cinnamon and whisk (paid link) until smooth. Set to the side.
  3. For the Bananas Foster sauce, heat cooking pan to medium heat then add butter. Once the butter melts, add brown sugar and sugar. Stir. 
  4. Slice your bananas and add to pan along with cinnamon. Add your whipping cream. Stir until creamy. Remove from heat and add in the vanilla extract.
  5. In a baking pan, add a layer of the cubed French bread then top off with egg mixture. Pour half of the Bananas Foster sauce over the top then layer everything again repeating the steps.
  6. Once everything is in the baking pan, slightly push the ingredients into the mixture to allow the bread to soak into the mix. Cover and refrigerate for 2 to 4 hours.
  7. When ready to bake, add the flour, cinnamon, brown sugar and butter into a bowl and mix together with a large fork until it begins to crumble. Spread the crumble mixture evenly over the top of casserole.
  8. Bake this dish at 350 degrees for 50 minutes. Serve immediately.
