Description
These Pumpkin Waffles are crispy on the outside, soft on the inside, and filled with pumpkin flavors and warm fall spices.

- 1 cup organic pumpkin puree
- 2 cups evaporated milk
- 3 large organic eggs, separated
- 1 tsp vanilla extract
- 2 cup all-purpose flour
- 1/2 cup cornstarch
- 2 tsp baking powder
- 1/3 cup powdered sugar
- 1/4 cup sugar
- 2 tsp ground nutmeg
- 2 tsp ground cinnamon
- 2 tsp pumpkin pie spice
- 1/4 tsp sea salt
- 2 tsp lemon zest
- butter, optional
- candied pecans, optional
- maple syrup, optional
Instructions
- Preheat a waffle maker.
- In a large bowl, add the pumpkin puree, evaporated milk, egg yolks, and vanilla extract. Blend until smooth.
- Sift your all-purpose flour through into a large bowl. Add the cornstarch, baking powder, powdered sugar, sugar, cinnamon, nutmeg, pumpkin pie spice, salt, and lemon zest to the same bowl. Mix until combined.
- Add the dry ingredients to the wet ingredients and blend until smooth. Do not overmix.
- Whip your egg white using a hand mixer (paid link) until stiff peaks form. Fold the egg whites into the waffle batter.
- Spray the waffle with cooking oil spray and pour 1/2 cup of the waffle batter for each waffle. Cook until golden brown.
- Serve immediately with optional toppings.
Notes
You can make your own pumpkin spice by combining 1 tsp cinnamon, 1/2 tsp ginger, 1/8 tsp nutmeg, and 1/8 tsp allspice. If you omit the pumpkin spice, add 1 additional tsp each of cinnamon and nutmeg.
