Gin Honey Bee Cocktail

Recipe by Eric Jones

Discover the ultimate Gin Honey Bee Cocktail! A sophisticated twist on the classic Bee’s Knees, featuring botanical gin, fresh lemon, honey syrup, and bitters.

  • Total Time5 minutes
  • Yield1 1x

Ingredients

Units Scale
  • 2.5 oz Gin
  • .25 oz Fresh Lemon Juice
  • .5 oz Honey Syrup (1:1 Honey: Water)
  • 1 Dash Angostura Bitters
  • Lemon peel, garnish

Instructions

  1. Chill the Glassware: Place a coupe glass in the freezer for 5 to 10 minutes before crafting your drink.
  2. Make the Honey Syrup: Combine equal parts warm water and raw honey (e.g., ¼ cup warm water to ¼ cup honey) in a small jar. Stir or shake vigorously until fully dissolved, then let cool.
  3. Combine Ingredients: In a cocktail shaker, add the gin, fresh lemon juice, hot honey syrup, and Angostura bitters.
  4. Shake to Chill: Fill the shaker generously with clean, hard ice. Secure the lid and shake vigorously for 12 to 15 seconds until the outside of the shaker tin frosts over.
  5. Strain and Serve: Double strain the cocktail through a fine-mesh strainer into your chilled coupe glass to catch any tiny ice shards and lemon pulp.
  6. Garnish: Express the essential oils of a fresh lemon wheel or twist over the top of the glass, rub the rim, drop it in, and enjoy immediately.

Notes

Cold temperatures cause pure honey to seize and stick to the bottom of the shaker tin. Dilute it 1:1 with warm water to create a fluid syrup that integrates smoothly into the cocktail.
