Creamy Cheddar Mashed Potatoes

Creamy Cheddar Mashed Potatoes blended with cream and two cheeses make for the perfect side dish to accompany any meal, anytime.

Ingredients

  • 2 lb Yukon Gold potatoes (4-5 Yukon Gold per pound)
  • 1/2 cup butter, melted
  • 1 tbsp sea salt
  • 1 tbsp black pepper
  • 1/2 tbsp onion powder
  • 1/2 tbsp garlic powder
  • 1 tsp Creole seasoning
  • 2 cups Monterey jack cheese
  • 1 cup white sharp cheddar cheese
  • 1/2 cup sour cream
  • 1 1/2 cup heavy whipping cream

Instructions

  1. Peel the potatoes with a potato peeler (paid link) and cut each potato into 4 cubes.
  2. Boil potatoes for 25 to 30 minutes, drain, and place in a large bowl.
  3. Mash potatoes with potato masher (paid link). Add butter, sea salt, black pepper, onion powder, garlic powder, and Creole seasoning. Continue to mash ingredients together. 
  4. Add Monterey jack cheese, white sharp cheddar cheese, sour cream, and heavy whipping cream. Mix using a hand mixer.
  5. To serve, top with butter and parsley flakes or chives.
