5 from 1 review

Make a Classic Rye Manhattan at home with spicy rye, sweet vermouth, and two bitters, stirred ice-cold. A bar-quality cocktail in 5 minutes.

  • Total Time: 5 minutes
  • Yield: 2 1x

Ingredients

Units Scale
  • 2 oz rye whiskey
  • 1 oz sweet vermouth
  • 2 dashes Angostura bitters
  • 1 dash orange bitters
  • 1 cup ice (for stirring)
  • 1 black cherry (brandied or Amarena), for garnish

Instructions

  1. Place a coupe or Nick and Nora glass in the freezer for 10 minutes, or fill it with ice water while you build the drink. A cold glass keeps the cocktail crisp to the last sip.
  2. Add the rye whiskey, sweet vermouth, Angostura bitters, and orange bitters to a mixing glass or a metal cocktail shaker (paid link) tin. A pint glass or mason jar (paid link) works perfectly.
  3. Fill the mixing glass about two-thirds full with ice (roughly 1 cup). Using a long spoon, stir smoothly around the inside edge of the glass for 30 to 40 seconds, until the outside feels frosty and the drink is ice-cold. Stir, don’t shake: shaking adds air bubbles and ice chips that cloud the drink and dull its silky texture.
  4. Dump the ice water from your serving glass if you used it. Hold a strainer (a Hawthorne, julep, or the slotted lid of a cocktail shaker (paid link)) over the mixing glass and strain the cocktail into the chilled glass, leaving all the ice behind.
  5. Drop a black cherry into the glass, or skewer it on a cocktail pick. Serve immediately, while it is at its coldest and most aromatic.

Notes

Treat vermouth like wine. Once opened, it oxidizes and turns flat and sour within weeks. Store it in the fridge and use it within a month. Buy small 375 ml bottles if you mix it only occasionally. This one change upgrades your Manhattan more than any whiskey splurge.
Use big, cold, dry ice. Ice straight from the freezer melts slowly and in a controlled way. Wet, half-melted ice from a bucket over-dilutes the drink before it ever gets cold.
Taste before you strain. Dip a straw or spoon in at the 30-second mark. If it still tastes hot and sharp, stir 10 more seconds. If it tastes thin, you’ve gone too far; next time, stir less.
No mixing glass? No problem. A mason jar (paid link) and a chopstick will do. For a strainer, hold a small spoon against the rim, or pour through a fine-mesh tea strainer.
Dial the balance to your taste. For a drier, spicier drink, go 2.5 oz rye to 0.75 oz vermouth. For a softer, sweeter pour, try 1.5 oz rye to 1 oz vermouth.
Smart swaps: Bourbon makes a rounder, sweeter Manhattan. Swap half the sweet vermouth for dry vermouth to make a Perfect Manhattan. Replace the vermouth with Amaro Averna for a bittersweet Black Manhattan.
Upgrade the garnish. Express an orange peel over the finished drink by squeezing it skin-side down, then rub it on the rim. The burst of citrus oil makes the first sip pop.
