Raise your hand if you love appetizers? I always look forward to the starter menu whether I’m dining out or creating a multi-course dinner at home. It’s the perfect way to kick off a meal and gets your palate excited and ready for the next course!
When I think of appetizers, I want something fairly easy to eat, hold, and that doesn’t require silverware (this is really important :)). That’s where I came up with the idea for my Open-Face Caprese English Muffins! Any dish teamed up with fresh mozzarella cheese is always a great go to for starters and this recipe is simple, straightforward and really easy to make.
Yes, English muffins are traditionally served for breakfast, but this recipe is an awesome non-breakfast option that results in a delicious appetizer or anytime snack. Starting with toasted Original Nooks and Crannies Thomas English Muffins, thick slices of fresh tomatoes and mozzarella are layered and then drizzled with my homemade herbed olive oil. Since the English muffins can hold up and absorb the oil, you can taste all the flavors in every bite — this is why they are my favorite.
So, if you’re looking for a tasty snack then look no further. Get a little creative with your English muffins and it will open up a whole new world of quick recipes where you can pile on any of your favorite toppings. Aside from the original, you can also head to your local Walmart to try out other varieties like their Light Multigrain or Cinnamon Raisin.
Tip: You can also turn this appetizer into a hot snack by broiling the layered muffins for 5 minutes in the oven. This will turn your “salad” into cheesy pizza goodness in no time!

- 3 Thomas English Muffins
- 8 oz Fresh Moist Mozzarella
- 1 Organic Large Tomato
- 1/2 cup Olive Oil
- 1 tsp Artisan Seasoning
- 1 tsp Oregano
- 1/2 tsp Black Pepper
- 1/4 tsp Himalayan Salt
- Gently pull apart the Thomas English Muffins and place onto a baking sheet.
- Cut tomato into slices then cut each piece in half.
- Slice the fresh mozzarella cheese into slices and cut each piece in half as well.
- In a small bowl, add Olive Oil and remaining seasonings. Whisk together.
- Place the tomato halves and mozzarella halves on English muffins. Sprinkle with olive oil mixture and serve immediately.
