If I could eat avocados every day, I would. I honestly wasn’t exposed to avocados until I moved to Texas and I’ve been loving them ever since. Having a very distinctive flavor and creamy texture makes it the perfect complement to many dishes I prepare — and its versatility was the idea behind this recipe.

My Avocado & Mango Salsa is the perfect way to highlight one of my favorite “fruits” and gives you another way to enjoy avocados. This recipe is very simple, very fresh, and full of health benefits. This salsa blends red onions, fresh cilantro, jalapeno, fresh mango, lemon juice, diced tomatoes, and last but not least avocados.

Avocados have the appearance of belonging to the veggie family, but because of the single seed, it is actually a fruit. Even though it doesn’t fit into the typical profile of fruit, it is still a very tasty addition to any diet!

This Avocado & Mango Salsa blends red onions, fresh cilantro, jalapeno, fresh mango, lemon juice, diced tomatoes, and last but not least avocados. The perfect choice for chips & dip or for topping off fish and/or chicken.

Avocado & Mango Salsa

The sweetness from the mango along with the citrus from the lemon juice turns this dish into a powerhouse full of flavor. Be mindful when cutting into both your avocado and mango as you’ll have a large seed to deal with. A little effort — but well worth the time.

When you want to put a spin on your chips & dip night give this Avocado & Mango Salsa a spot on the table and you will be highly satisfied. It is also equally great as a topping on grilled fish or chicken!

This Avocado & Mango Salsa is the perfect choice for chips & dip or for topping off fish and/or chicken.

Ingredients

  • 3 Medium Avocados
  • 1 Roma Tomato
  • 1 Mango
  • 1/4 cup Red Onion
  • 1/3 cup Fresh Cilantro
  • 1 Jalapeno
  • 2 tbsp Lemon Juice
  • Salt to taste (optional)

Instructions

  1. Begin by chopping the Roma tomato into diced pieces and add to large bowl.
  2. Remove the outside skin from the red onion. Chop into diced pieces and place 1/4 of the diced onion into bowl with tomato.
  3. Finely chop the cilantro and add to bowl.
  4. Slice the stem from the jalapeno then cut in half to remove seeds. Finely chop half of the jalapeno before adding to large bowl of other ingredients.
  5. Cut the mango in half and remove the skin. Chop into small cubes and add to bowl of ingredients.
  6. Cut the avocados in half and remove the seed. Scoop out the inside with a spoon. Cut avocados into small cubes then add to bowl of ingredients.
  7. Pour lemon juice over ingredients. Gently fold together. Salt to taste.

Notes

I didn’t add any salt (or pepper) to this recipe. I allowed the lemon juice to play that role, but feel free to season to taste.
